Chef Abraham Conlon of Fat Rice Introduces The Ladies' Room, A Cocktail Den in Chicago

Chef Abraham Conlon and Partner Adrienne Lo—owners of Fat Rice in Chicago, one of the country’s most dynamic restaurants—are pleased to announce the recent and highly anticipated opening of The Ladies’ Room, an intimate cocktail lounge that seats just 18 and is inspired by the fantan (Chinese gambling halls) and red light districts that proliferated around Macau in the mid 19th and 20th centuries. Below you will find more details about the cocktail den, as well as several unique offerings from the talented chef’s first foray into craft cocktail realm. THE RED-LIGHTS OF MACAU: To properly showcase celebrated Chef Abraham Conlon’s meticulously crafted cocktail program, The Ladies’ Room drinks’ global scope complements the adjoining restaurant’s culinary program while simultaneously marking a departure from the more food-friendly drinks available in the restaurant’s dining room. Decorated with Chinese antiques sourced from Partner Adrienne Lo’s grandparent’s house, the deep-red walls are plastered with vintage 1920s Chinese pinup posters and a six-and-a-half-foot mural of an Asian Madonna to create the space’s sensuous, dimly lit aesthetic. 

HOUSE INFUSED SPIRITS & COCKTAILS: The extremely limited seating arrangement allows guests an opportunity to sample Chef Conlon’s ambitious drinks and impressive large-format offerings, which are headed up by Bar Manager Annie Beebe-Tron. With cocktails that are largely composed of house-infused spirits like Visinata (a sipping spirit made from sour Great Lakes cherries infused with vanilla), house-made bitters such as black cumin cherry stem bitters and green Sichuan peppercorn bitters, and a signature brand of Tuica—a Romanian plum brandy created in concert with Seedling Farms, CH Distillery and Onu, his Transylvanian restaurant janitor—The Ladies’ Room also boasts upmarket Japanese whiskeys, cognac and champagne, hot and cold tea drinks, and Conlon’s house-made Chicago “Malort”. 

WHAT ELSE?: Wine director Craig Perman has sourced rare, old-school, baller classics, for the 10 bottle list including vintage and Grower Champagne, Bourdeaux and Burgundy among others.
